Why whole kali mirch beats the powder, and by how much

There is a reason every restaurant kitchen worth anything has a pepper mill on the pass and a jar of whole peppercorns beside it. It is not theatre.

Short answer: Pepper's heat comes from piperine and its aroma from volatile oils. Grinding releases both to the air, so ground pepper is noticeably flat within a month. Whole peppercorns keep for two years.

Black Pepper (Kali Mirch) - Daldawala, Salumbar
Whole peppercorns - heavy, wrinkled, uniform

What is actually in a peppercorn

Two separate things make pepper taste like pepper. Piperine is the alkaloid that produces the heat, and it is fairly stable. The aroma - that bright, woody, almost citrus note that makes freshly ground pepper smell alive - comes from volatile oils sitting in the outer layer of the corn.

Volatile means exactly what it sounds like. The moment the corn is cracked, those oils begin leaving. Within weeks a ground pepper has lost most of its smell and kept most of its heat, which is why old pepper powder tastes merely hot rather than interesting.

The shell is a lid. Keep the lid on until you need what is inside.

The adulteration you cannot see in powder

Black pepper is expensive by weight, and papaya seeds look remarkably like peppercorns - similar size, similar wrinkled black surface. Mixed into a lot of whole pepper they can be spotted; ground into powder, nobody can tell.

The test on whole pepper is simple and takes a minute: drop a spoonful into a glass of water. Real peppercorns are dense and sink. Papaya seeds are lighter and most of them float. A few floaters in a kilo is normal - a layer of them is not.

In powder, the same test does not work, and neither does any other test you can do at home. That alone is a sufficient argument for buying whole.

Clove (Laung) - Daldawala, Salumbar
Laung, another spice that should never be bought ground

Choosing a good lot

Look for corns that are uniform in size, heavily wrinkled, and dark grey-black rather than brown. Pick a few up - they should feel surprisingly heavy for their size, because density is a direct proxy for how much is inside.

Smell the open jar. Good pepper hits you immediately and makes you want to sneeze. A jar that smells of nothing from six inches away has either been open too long or was poor to begin with.

Indian pepper is mostly Malabar or Tellicherry, the latter being the larger, later-picked, more expensive grade. Tellicherry is genuinely better - bigger corns, more aroma - and if the pepper is going on the table rather than into a pot, it is worth the difference.

How to use it

Grind at the point of use. A hand mill, a mortar, or a quick pulse in a dry grinder - all work. What matters is the gap between grinding and eating, and shorter is better.

Where pepper goes in matters too. Added at the start of a long cook, most of the aroma boils off and you are left with heat. Added at the end, off the flame, the aroma survives. Most Indian recipes that call for pepper benefit from a pinch at the start and a crack at the end.

For the small amount of powder a household genuinely needs ready-ground, grind a week's worth and keep it in a small airtight jar. That is a reasonable compromise and still beats a six-month-old packet by a distance.

Questions people ask

How long does black pepper keep?

Whole peppercorns keep two years or more in an airtight jar. Ground pepper is noticeably flat within a month and uninteresting within six.

How can I tell if black pepper is adulterated?

Drop whole corns in water. Real pepper is dense and sinks; papaya seeds mostly float. The test only works on whole pepper, which is the point.

What is Tellicherry pepper?

A larger, later-picked grade of Indian black pepper. More aroma, bigger corns, higher price. Worth it for table pepper; wasted in a long-cooked gravy.

Should pepper go in early or late?

Both. A pinch early for heat that permeates, a crack at the end for aroma that would otherwise boil away.

Is white pepper the same thing?

Same berry, with the outer skin removed. Less aroma, cleaner heat, and it disappears visually into pale dishes - which is usually why it is chosen.

How should peppercorns be stored?

Airtight, away from the stove, out of sunlight. The enemy is heat, which drives off the oils even through an unbroken shell.
