Makhana has become the fashionable Indian snack, and most people's first experience of it is opening the packet, eating three, and quietly putting it away.
That is because the packet contains an ingredient, not a snack. The thing it becomes is good; the thing in the packet is not.
Short answer: Raw makhana is soft and bland. Dry-roast it on a low flame for six to eight minutes, stirring constantly, until it snaps when you press it. That single step is the difference between a disappointing snack and a good one.

Why the raw one disappoints
Makhana is the popped seed of a water lily, dried and sold as it is. At that stage it still holds a little moisture, which makes it soft and slightly chewy, and it has had nothing done to develop any flavour.
Roasting drives off that moisture and browns the starch on the outside. The texture turns from spongy to properly crisp, and the taste goes from nothing to faintly nutty. It is the same transformation as roasting a raw peanut - nobody would eat those raw either.

The method
Heavy pan, low flame, no oil needed. Tip in a single layer - crowding is the most common mistake, because the ones underneath steam rather than roast.
Stir continuously for six to eight minutes. Makhana scorches quickly and unevenly, and a minute of inattention produces a pan with black ones in it.
The test is not colour, it is sound and feel. Take one out, let it cool for a few seconds, and press it. If it gives, keep going. If it snaps cleanly, it is done. Pull the pan off the heat the moment that happens, because residual heat keeps working.
Salt and masala go on at the end, off the flame, while they are still hot enough for it to stick.

What to put on it
Plain salt. Honest and the best version for eating by the handful.
Salt, red chilli and a squeeze of lemon. The standard, and the reason the bowl empties.
Chaat masala. Works, and the amchur in it makes them go soft faster - eat the same day.
Ghee, salt and black pepper. Richer, and the ghee helps the seasoning stick. Keeps less well, about a week.
Toss in a bowl rather than in the pan, so the seasoning distributes rather than catching on the hot metal.
The weight-loss claim, honestly
Makhana is genuinely low in calories for its volume - about 100 calories for 30 grams, which is two large handfuls and takes real time to eat. It is almost fat-free, carries some protein, and is filling for what it weighs.
That makes it a better evening snack than namkeen or biscuits by a clear margin. It does not make it a weight-loss food, because no food is. A bowl of makhana fried in ghee and eaten in front of the television instead of dinner is not a diet.
Used as the thing you reach for at six in the evening instead of something fried, it is one of the more useful swaps available.

How to roast makhana properly
- Heat a heavy pan on a low flame. Kadhai or tawa. Thin aluminium will scorch them before they crisp.
- Add a single layer. Do not crowd it. Two batches crisp better than one crowded one.
- Stir without stopping. Six to eight minutes. Makhana burns in patches the moment you look away.
- Test by pressing one. Let it cool a few seconds, then squeeze. It should snap, not bend.
- Season off the heat. Salt, chilli, lemon - tossed in a bowl while they are still hot so it sticks.
- Cool completely before storing. Warm makhana in a jar makes its own steam and goes soft overnight.

Questions people ask
Do I need to roast makhana?
Yes, if you want it to be good. Straight from the packet it is soft and tastes of almost nothing. Six minutes in a dry pan changes it completely.
How many calories in makhana?
About 100 calories per 30 grams - which is two generous handfuls and takes a while to eat. Low for its volume, which is the point.
How long does roasted makhana keep?
Two weeks in an airtight jar, provided it was completely cool when you put it in. Ghee-roasted keeps about a week.
Is makhana good for weight loss?
It is a far better evening snack than fried namkeen - low in fat, filling for its calories. That makes it a good swap, not a weight-loss food in itself.
Can makhana be roasted in the microwave?
It can, in short bursts with a stir between, but the result is less even than a pan. The pan takes six minutes and is better.
Why did my makhana go soft again?
Either it was stored while still warm, or the jar is not airtight. Makhana pulls moisture out of the air enthusiastically.
