Akhrot: how many, soaked or dry, and which cut to buy

Walnuts are the nut people buy because they have been told to and then do not eat, because the first one tasted bitter and nobody explained why.

The bitterness is in the skin, it is normal, and there is a simple fix.

Short answer: Two to four walnut halves a day is the usual amount - they are the fattiest common nut, so the portion is smaller than for almonds. Soaking overnight takes the bitterness out of the skin and makes them easier to digest.

Why they taste bitter, and the fix

The thin brown skin on a walnut kernel carries tannins. Those tannins are where most of the antioxidant content sits, and they are also what makes a walnut taste astringent and faintly bitter when you bite into a dry one.

Soak the kernels in room-temperature water overnight and much of that tannin leaches out. The nut softens, the bitterness drops away, and what is left tastes mildly sweet and creamy. Drain the water - that is the point of the exercise.

If you like the bitterness, which plenty of people do, eat them dry. There is no health reason to soak.

How many a day

Two to four halves. Walnuts are around 65% fat by weight, which is higher than almonds or cashews, so four halves already carries about 100 calories.

They are also the only common nut with a meaningful amount of ALA, a plant omega-3. Four halves covers most of an adult's daily need for it. That is a genuine reason to keep walnuts in the house, and it is also the entire claim - a walnut is not medicine.

In shell, two-piece or four-piece

In shell is the cheapest way to buy actual walnut, once you account for the roughly 55% that is shell. It also keeps far longer, because the shell is doing exactly the job it evolved to do - keeping air off the oil. If you have somewhere to store them and do not mind cracking, buy the shell.

Two-piece kernels are clean halves. Buy these when the walnut will be seen: on a plate, in a salad, in a gift box.

Four-piece are the same kernels broken smaller, and cost less. For a cake, a ladoo, a chutney or anything chopped, there is no reason to buy anything else.

Spotting an old walnut

Walnuts go rancid faster than almost any other nut, because that same high oil content that makes them worth eating is also what oxidises. An old walnut is unmistakable once you know it: sharp, bitter in a chemical way rather than a tannic way, with a smell like old paint.

Look for kernels that are pale to light amber rather than dark brown, plump rather than shrunken in the grooves, and smell before you buy. A shop that keeps walnuts in a sealed container away from the window is a shop that understands them.

How to soak walnuts overnight

  1. Count out what you want. Four halves per person. Soaked walnuts are soft and easy to over-eat.
  2. Cover with room-temperature water. Twice their depth. Warm water makes them mushy.
  3. Leave six to eight hours. Overnight. You will see the water turn brown - that is the tannin coming out.
  4. Drain and rinse once. Do not keep the water. It is the bitterness you removed.
  5. Eat the same morning. Soaked nuts are wet and will spoil within a day. Keep them in the fridge if you must wait.

Questions people ask

How many walnuts should I eat a day?

Two to four halves. They are the fattiest of the common nuts, so the sensible portion is smaller than for almonds or cashews.

Should walnuts be soaked?

Only if you dislike the bitterness or find dry nuts hard to digest. Soaking removes tannins from the skin. It is a taste decision, not a health one.

Why are my walnuts bitter?

Either the tannins in the skin, which is normal and fixed by soaking, or the nut has gone rancid, which is not fixable. Rancid is sharp and smells of paint; tannin is dry and astringent.

Is it better to buy walnuts in the shell?

Usually yes, if you have the storage. The shell protects the oil, so they keep far longer, and a kilo in shell yields about 400-450 g of kernel - still cheaper than buying kernel.

Do walnuts help the brain?

They carry ALA, a plant omega-3, and the association between nuts and cognitive health is real but modest. Treat it as a good food, not a supplement.

Light or dark walnut kernels?

Light kernels are milder and are what most people prefer to eat plain. Dark are stronger and more bitter, cost less, and disappear into baking.
