Mamra or California badam: what you get for three times the price

Every dry fruit shop in India has this conversation several times a week, and most of it is conducted at cross purposes. Mamra and Californian almonds are not two grades of the same thing. They are different almonds from different places, and which one is right depends entirely on what you are going to do with it.

Short answer: Mamra are smaller, oilier, grown in Iran and Afghanistan, and cost two to three times as much. The difference is real when you eat them plain. It disappears entirely once they are ground into a sweet or a milk.

What mamra actually is

Mamra almonds are grown mainly in Iran and parts of Afghanistan, on trees that produce far less per tree than the irrigated orchards of California. They are smaller, rounder, more irregular in shape, and noticeably oilier - break one and your fingers feel it.

Most of the price gap is that yield difference plus the fact that mamra are largely hand-sorted rather than machine-graded. You are paying for scarcity and labour, not for a different species.

Where the difference is real

Eaten plain - soaked in the morning, or out of a dish on the table - mamra genuinely taste different. Denser, richer, a little sweeter, with a texture closer to a fresh nut than a dried one. If almonds are something you eat rather than cook with, the difference is worth tasting once before you decide.

There is a common claim that mamra are nutritionally superior. The fat content is a little higher, which is why they feel richer. Beyond that, the difference between the two on any nutrition table is far smaller than the difference between a fresh lot and a year-old one of either.

Jumbo Almonds (Badam) - Daldawala, Salumbar
Californian jumbo - large, flat, uniform

Where the money is wasted

Badam milk, thandai, any ground preparation. Once the almond is a paste, nothing that distinguished the mamra survives. Buy Californian.

Sweets and barfi. Same reasoning, and it is worse - you are often also paying for a uniform shape you are about to destroy. Katran, the sliced offcuts, are the right purchase here and cost less than either whole grade.

Daily soaked almonds for a family of five. This is the one where the maths bites. At four almonds each that is twenty a day, six hundred a month, and the difference between mamra and Californian over a year is real money for a difference nobody in the house will reliably identify blind.

The honest recommendation

Keep Californian for the kitchen and the daily habit. If you want to try mamra, buy a small quantity, eat them plain for a week, and decide for yourself whether you can tell. Plenty of people can and are happy to pay. Plenty of people cannot, and now know not to.

What matters more than either choice is freshness. A fresh Californian almond beats a mamra that has been sitting in a warm shop since last season, every single time, and costs a third as much.

Questions people ask

Is mamra badam better than California?

Different, not better. Mamra are smaller, oilier and richer eaten plain. For anything ground or cooked, Californian is the sensible buy.

Why is mamra badam so expensive?

Lower yield per tree in Iran and Afghanistan, and mostly hand sorting. It is a supply and labour cost, not a quality grade.

What is gurbandi badam?

A smaller, denser, slightly bitter Afghan almond, usually priced between Californian and mamra. Strong flavour - some people prefer it to both.

Which badam for badam milk?

Californian, or katran if you are buying in quantity. The grinding erases every difference you would be paying mamra prices for.

Are mamra almonds more nutritious?

Marginally higher in fat, which is why they taste richer. On every other measure the gap between a fresh lot and an old lot is larger than the gap between the two varieties.

How can I tell mamra from Californian?

Shape. Californian are large, flat and all the same. Mamra are small, round, and visibly irregular from one nut to the next.
