Dried cranberry, blueberry and cherry: how much of it is sugar

The dried berry jars are the most misunderstood part of a dry fruit shop, because they are bought as a health food and are mostly a sweet. That is not a reason to avoid them - it is a reason to know what you are buying.

Short answer: Dried cranberries are typically 60-70% sugar by weight because the fruit is too sour to eat otherwise, and most of that is added. Dried blueberries are usually less sweetened. Glacé cherries are a confection, not a fruit.

Why cranberries have to be sweetened

A fresh cranberry is about 4% sugar and intensely sour - sour enough that almost nobody will eat one plain. Drying concentrates everything, including the acidity.

So commercial dried cranberry is infused with sugar syrup during drying. The result is typically 60 to 70% sugar by weight, most of it added. That is roughly the same sugar content as a raisin, except that a raisin arrives there naturally and a cranberry is taken there deliberately.

This is not a secret and it is on the label. It is simply not what most people have in mind when they buy them as a health food.

Unsweetened dried cranberries exist. They cost considerably more, they are genuinely very sour, and very few people buy them twice.

The urinary tract claim, briefly

Cranberry and urinary tract infections is the one health claim attached to these berries that has real research behind it. Proanthocyanidins in cranberry appear to reduce bacterial adhesion in the urinary tract, and reviews have found a modest reduction in recurrent UTIs in women who get them often.

Two caveats matter. The studies use cranberry juice or concentrated extracts, in quantities well beyond what you would get from a handful of dried fruit. And a sweetened dried cranberry is mostly sugar - which is not what you want to be eating a lot of if you are prone to UTIs.

If this is the reason you are buying them, the honest answer is that dried cranberry is not the right form, and that a recurrent UTI is a doctor's problem rather than a grocery one.

What they are genuinely good for

Baking. This is their real job and they are excellent at it. Dried cranberries in a cake, a cookie or a muesli bar provide sharp little bursts against a sweet background, which is exactly what a raisin does not do.

Salads. A handful of dried cranberry in a green salad with nuts is a genuinely good combination, and the sweetness has a purpose there.

Muesli and breakfast mixes. Again, the tartness is doing work.

Glacé cherries are for Christmas cake and for decorating, and they are candied fruit - treat them as the sweet they are.

What they are not good for is eating by the handful as a healthy snack. For that, a plain raisin is cheaper and no worse, and a handful of nuts is better than either.

Buying them

Read what you can. Where there is a label, look at whether sugar appears in the ingredients and where in the list. Where it is loose, ask - a shop knows whether its cranberry is sweetened, and the answer is almost always yes.

Look for berries that are soft and pliable rather than hard. Hard dried berries have been over-dried or have sat too long and will stay hard in whatever you bake them into.

Some dried berries are also oiled lightly to stop them clumping, which is normal and declared.

These are moist, sugary fruits, so they belong in an airtight jar in the fridge through summer, like raisins and figs. They will attract insects on a warm shelf within a couple of months.

Questions people ask

Are dried cranberries healthy?

They are typically 60 to 70% sugar, most of it added, because fresh cranberries are too sour to dry plain. They are a good baking ingredient rather than a health food.

Do dried cranberries help with UTIs?

The research uses juice or concentrated extracts in quantities well beyond a handful of dried fruit, and sweetened dried cranberry is mostly sugar. Recurrent UTIs are a doctor's problem.

Are dried blueberries sweetened too?

Usually, but less heavily than cranberries, because blueberries are not as sour to begin with. Check the label where there is one.

What are glacé cherries?

Fruit candied in sugar syrup. They are a confection for baking and decorating, not a dried fruit in the usual sense.

What are dried berries good for?

Baking, muesli and salads, where the tartness is the point. For plain snacking, raisins are cheaper and nuts are better.

How should dried berries be stored?

Airtight, in the fridge through summer. They are moist and sugary and attract insects on a warm shelf.
