Muesli mix: reading the jar before you buy it

Muesli arrived in India as a health food and most of what is sold under the name is a breakfast cereal with a fifth of its weight in sugar. The word is not protected and does not promise anything.

Short answer: Muesli is traditionally raw oats, nuts and dried fruit with nothing added. Granola is the same thing baked with oil and sugar. Most Indian packaged 'muesli' is closer to granola, and the sugar is usually between 15 and 30 per cent.

Muesli and granola are not the same thing

Muesli, as the word was originally used in Switzerland, is raw rolled oats mixed with nuts, seeds and dried fruit, eaten with milk or curd. Nothing is cooked and nothing is added.

Granola is the same mixture baked with oil and a sweetener - honey, sugar, syrup - until it clusters and crisps. It tastes considerably better, which is why it exists, and it is correspondingly higher in sugar and fat.

Neither word is regulated in a way that stops a product being called muesli when it is granola. Which is why, in practice, the only reliable guide is the nutrition panel.

What the words mean

What to look at on the pack

Sugar per 100 g. This is the number. Under 10 g is genuinely low. Between 10 and 15 is reasonable. Over 20 and you are eating a sweetened cereal, whatever the front of the pack says.

Note that fruit contributes sugar honestly - a muesli with a lot of raisins will show sugar without anything having been added. The ingredients list tells you which it is: if sugar, honey, syrup, jaggery or malt appears, it was added.

Where oats sit in the list. If oats are not first, the product is mostly something else - usually flakes of cheaper grain.

How much nut and seed. Often stated as a percentage. Many cheap muesli packs are under 5% nuts, which is a few almonds in a whole box.

The seed-mix alternative

A plain seed muesli mix - pumpkin, sunflower, flax, melon, sesame, sometimes with nuts - takes a different approach. No oats, no sugar, no flakes. Just the dense part.

It is not a cereal in itself; it is what you add to one. Two spoons over curd, over a bowl of poha, into porridge, or stirred into a smoothie. That way you control the base and the sweetness, and you are getting the magnesium, zinc and protein that the nut-and-seed fraction of a muesli is supposed to provide and usually does not.

It also keeps better than a made-up muesli, because there are no oats to go stale and no dried fruit drawing moisture into the jar.

Making your own

Rolled oats as the base. Whatever nuts and seeds you like, roughly a third of the total weight. Raisins, chopped dates or chopped anjeer for sweetness, maybe a fifth. A little cinnamon.

Toast the oats, nuts and seeds briefly in a dry pan - five minutes, low flame - and let them cool completely. Add the dried fruit afterwards, not before, or it will go hard in the pan.

No oil and no sugar means it will not cluster, and it will taste less interesting than a bought granola. That is the trade, and milk, curd or a spoon of honey at the table closes most of the gap.

Keep it in an airtight jar and make a fortnight's worth at a time. The dried fruit slowly makes the oats soft, which is the limiting factor.

Questions people ask

Is muesli healthy?

It depends entirely on the sugar. Traditional muesli - raw oats, nuts, dried fruit, nothing added - is. Most Indian packaged muesli carries 15 to 30 g of sugar per 100 g, which makes it a sweetened cereal.

What is the difference between muesli and granola?

Granola is baked with oil and a sweetener until it clusters. Muesli is raw. Granola tastes better and carries more sugar and fat.

How much sugar should muesli have?

Under 10 g per 100 g is genuinely low; over 20 g is a sweetened cereal. Check the ingredients to see whether it came from fruit or was added.

What is a seed muesli mix?

Seeds - usually pumpkin, sunflower, flax, melon and sesame - with no oats and no sugar. It is something to add to a breakfast rather than a breakfast in itself.

Can I make muesli at home?

Yes. Rolled oats, about a third nuts and seeds, a fifth dried fruit. Toast the oats and nuts briefly, cool, then add the fruit. It will not cluster without oil and sugar.

How long does homemade muesli keep?

About a fortnight before the dried fruit starts softening the oats. Airtight jar, away from damp.
