Pista: salted, plain, or kernels - what you are actually buying

Pista is the dry fruit where the form you buy matters most to what you pay, and where the arithmetic trips most people up at the counter.

Short answer: Pistachios in shell cost less per kilo but roughly half the weight is shell. Kernels cost more and are all usable. For snacking buy in shell; for cooking, garnish or mithai buy kernels - and for colour, buy Pishori.

The shell arithmetic

A kilogram of in-shell pistachios contains roughly 450 to 500 grams of actual kernel. So in-shell at a given price is, in kernel terms, costing about twice that.

Which means kernels are usually the better buy on pure value - and yet in-shell is still the right purchase for snacking, for one reason that has nothing to do with money. The shell slows you down. A bowl of kernels in front of a person disappears in minutes; the same quantity in shell takes half an hour and feels like more.

For anything where the pistachio is going into something - a kheer, a barfi, a garnish, an ice cream - kernels are obviously correct, and cheaper once you account for the shelling you are not doing.

Salted or plain

Roasted salted is the standard snacking form and tastes considerably better than plain for that purpose. The salt is a genuine amount, though - a 30-gram portion of salted pistachios can carry 120 mg or more of sodium, which adds up if you eat them daily.

Plain roasted is the sensible daily option, and plain raw keeps longest of all. If pistachios are an occasional thing, buy salted and enjoy them. If they are a daily habit, buy plain.

One thing to check with salted pistachios: a heavily split shell means the nut inside has been exposed and is likely drier. A good roasted pista is split enough to open with a thumbnail, not gaping.

The green question

Pistachio kernels vary from pale yellow-green to a vivid green, and the vivid ones cost more. This is a real varietal and harvest difference - Pishori and similar Iranian grades are naturally greener, and earlier-harvested nuts are greener than late ones.

Where that matters is anywhere the colour is on display: milk masala, thandai, kulfi, the garnish on a barfi. Where it does not matter at all is in anything cooked, ground or hidden.

Be a little careful of unnaturally uniform, almost emerald kernels - artificial colouring on pistachios is not unheard of. Natural green varies from nut to nut within the same lot. A bag where every single kernel is the identical shade is worth a question.

How many, and keeping them

About 30 grams a day, which is roughly 45 to 50 kernels - a surprisingly generous handful, because pistachios are lighter per nut than almonds or cashews. That carries about 160 calories, 6 grams of protein and a good amount of potassium and B6.

They go rancid like any oily nut. Kernels keep around three months at room temperature and six in the fridge; in-shell keeps roughly twice as long, because the shell is doing its job. Airtight, away from the stove, as with everything else in this shop.

Questions people ask

Is it cheaper to buy pistachios in shell?

Per kilo yes, per kilo of edible nut no - roughly half the weight is shell. In shell is still worth buying for snacking because it slows you down.

How many pistachios a day?

About 30 grams, which is 45 to 50 kernels. That is around 160 calories and a genuinely generous handful.

Are salted pistachios bad?

Not in themselves, but a 30 g portion can carry over 120 mg of sodium. Fine occasionally; buy plain if they are a daily habit.

Why are some pistachios greener?

Variety and harvest timing. Earlier-picked and certain Iranian grades like Pishori are naturally greener. Perfectly uniform emerald kernels are worth questioning.

Which pista for mithai?

Pishori or another green kernel grade, because the colour is the point. For anything ground or cooked, ordinary kernels are fine and cheaper.

How long do pistachios keep?

Kernels about three months at room temperature, six in the fridge. In shell, roughly double - the shell protects the oil.
